Corn Fritters
1 6.5 oz pouch of cornbread mix (I use Betty Crocker)
1-1/2 cups of corn (good use of leftover corn)
1 large egg
1/2 cup milk
1 T vegetable oil
In a medium bowl, combine cornbread mix, corn, egg and milk. Let mixture sit for about 5 minutes. Pour oil into large nonstick skillet and heat over medium to high heat. Drop by heaping tablespoons of batter into hot oil. Cook a minute or two on each side, flattening with spatula after flipping.
*note: It will take a little more than 1 tablespoon of oil if you want them crispy. I added a bit of oil with each batch. Yummy!
